HOW TO MAKE TOMATO PASTE AND IT’S STORAGE
Fresh tomato price usually crash between late December and January every month. This is because it is the harvest period for the said vegetable.
Making tomato paste is not difficult. It helps you save a lot of resources when fresh tomatoes will be sarce in the market.
HOW TO PROCESS FRESH TOMATOES TO TOMATO PASTE
There are two ways of processing tomato paste
1. Buy fully ripe and hard tomatoes
2. Buy fresh shombo and Tatashe if you want your paste more red in colour.
4. Wash with cold water and cut into pieces (2-4 slices)
5. Bring to boil. Do not add any water while cooking
6. Add salt to the pot of boiling tomato
7. Once the tomato has boiled and water has covered it to the top
8. Bring it down and allow to cool, then sieve out the water
9. Grind to smooth consistency (Do not grind before boiling)
10. Now do gravitational sieving to further eliminate water from the ground tomatoes and obtain harder paste.
11. Put the paste into airtight containers like mayonnaise Bottles.
NOTE:
- Do not use the plastic ones because the lid doesn’t cover properly. You an find a way to get it tightly covered.
- Whether or not to add onion and fresh pepper is optional. I do not add to mine as it makes it change taste or sour easily.
12. Cover the tip with a foil so that air cannot penetrate into it (This is optional)
Alternatively, you can spread a little vegetable oil on top to prevent air.
13. Keep it in room temperature if you do not have freezer for storage.
NOTE:
- Avoid opening the container regularly.
- Be sure to use up anyone you open to avoid whitish mucus forming on top of it.
14. If you have freezer, put the paste inside any container/cellophane and then store in the freezer. The tomato you process now can last till next 6-9 months.
SECOND METHOD OF HOMEMADE TOMATO PASTE
1. Repeat process 1-9 above.
No need for gravitational sieving, just ensure the grinded tomato on fire dries with no water traces in it.
