Homemade Tiger nut Milk Recipe and it's Nutritional Benefits

Tiger nut milk drink, also known as “Kunnu Aya/Ofio” is a sweet, smooth, creamy, milky white or light brown drink. A refreshing beverage made from tiger nuts (also called chufa nuts or earth almonds)

Popular in West Africa, particularly in Nigeria and Ghana. Tiger nut milk is rich in vitamins, minerals, and antioxidants; high in fiber and proteins.

INGREDIENTS for Tiger nut milk

  • 1-2 cups of dried tiger nuts
  • Date I/2 cup
  • Ginger 2 medium size
  • 1-2 coconuts
  • Water for soaking and blending
  • Sweetener (optional) like honey, sugar, or dates
  • Flavorings (optional) like vanilla extract or cinnamon
Equipment Needed:

– Blender or food processor
– Nut milk bag or cheesecloth
– Bowl or pitcher
– Bottle or Mason jar for storing the drink
– Strainer or sieve (if not using a nut milk bag)

Equipment Not Needed:

– Stove or cooking equipment is not required for this recipe.

Procedures for making Tiger nut milk

1. Pick dirt from dried tiger nut and remove stones.

2. Soak the tiger nuts: Place the tiger nuts in a bowl and cover them with water. Let them soak overnight or for at least 8 hours. This softens the nuts for easier blending and releases their natural flavors.

2. Rinse and drain: After soaking, drain the water from the tiger nuts and give them a quick rinse under running water.

3. Slice and cut the ginger, coconut, date (slice open the seed out). Slice into tiny bit.

4. Combine the Tigernut, Coconut, Date and ginger and transfer to the blender or food processor or take to the grinding mill.

5. Add fresh water in a 1:3 ratio (1 cup of tiger nuts to 3 cups of water). Adjust the amount of water based on your desired consistency.

6. After grinding, strain the mixture: Pour the blended mixture through a nut milk bag or cheesecloth placed over a bowl or pitcher as in pap production. Work in small batches if necessary.

7. Gently squeeze or press the bag to extract the liquid.

8. Add sweetener or flavorings if desired. Blend until smooth and creamy. Often with a dash of cinnamon, nutmeg, or ginger for added flavor

9. Pour the tiger nut milk into a bottle for storage. Refrigerate immediately so as to avoid souring. It should not be too thick or watery.

Note: It can be refrigerated for up to 3-4 days.

Viola!! Your homemade tiger nut milk is ready.

Serve it chilled or over ice if desired and enjoy with Chin- Chin or any snacks of choice.

Note: Tiger nut milk may naturally separate, so give it a good shake or stir before serving.
