RECIPE FOR MAKING NIGERIAN CRUNCHY BUNS

INGREDIENTS:

  • Flour 3 cups (375g)
  • Sugar 1/4 cup or as desired
  • Baking powder 1tbsp
  • Milk(optional) 1/2 tbsp
  • Nutmeg(optional) 1/2 tsp
  • Margarine/butter 1/4 cup (125g)
  • Water 1/2 cup
  • Salt. 1/4 tsp
  • Eggs 2 Large
  • Oil for frying

METHODS FOR PREPARATION

  • In a medium bowl, mix all dry ingredients together. That includes, flour, baking powder, Nutmeg and Salt and set aside. (Don’t add water in this stage).
  • In another bowl, whisk eggs and melt butter. You can do this by placing the margarine in a plate or cup, then place over a heat or place inside a bowl of hot water.
  • Add the melted butter and warm water. Beat properly until the margarine incorporates properly.
  • Make a well in the middle of the dry mixture and pour the mixture of a properly whisked egg and butter mixture into it.
  • After pouring the wet content to the dry ingredients, mix it all together till it looks lumpy.
  • Dissolve sugar and milk (if you are using powdered milk) to the cup of warm water.
  • Make a well in the centre of your lumpy mixture and gently, bit by bit empty the mixture of sugar and milk into it.
  • Turn the mixture continuously as you empty the liquid content till it gives a sticky and tough stretchy dough. If you feel your dough is too thick or you prefer a rather pastry form you add a little more water.

  • Cover the batter with a clean napkin and set aside for 5mins.
  • Heat the vegetable oil in a medium heat and don’t let the oil to be so hot to avoid uncooked buns and if the oil is not hot enough, it will soak the oil and become saggy.
