PERFECT NIGERIAN EGG ROLL WITH FULL EGG (FRIED AND BAKED RECIPE)
Nigerian Egg roll is a snack loved by most people. It is a snack that can sustain you for a long time while you wait for main meal. The richness and crispiness of the perfect Nigerian egg roll on the outside and inside cannot be overrated.
Nigerian egg rolls are made of boiled eggs; it could be full or half egg, it could also be hard or soft boiled eggs that are wrapped in the dough and deep-fried or baked as soon as possible. They are basically round in shape, this is because the eggs are enclosed inside it. I prefer using hard boiled eggs especially, when frying egg roll with half eggs ( egg split into two). Note that, egg rolls are not the same as Scotch eggs, while scotch eggs are enclosed in sausages, egg rolls are covered with dough.
This Perfect Nigerian egg roll can be served as breakfast with tea or coffee and can be served as lunch with chilled drink/ Chapman drink. Most times I used it for my children’s lunch pack as their snacks during break time at school.
The ingredients that can be used for this perfect Nigerian Egg Roll are flour, sugar, boiled eggs, baking powder, salt, margarine, milk, vegetable oil for frying and warm water. This ingredients can be bought in your local market or super stores.
If you carefully and dedicatedly follow the below recipe, your Freshly homemade perfect Nigerian egg rolls will not only be delicious but trust me, it will come out tasty, crunchy and satisfying. It is simply worth giving a trial and hey, if in case you couldn’t get it right at first try, don’t give up! one more try could change the story. With that been said, let’s proceed to the steps of how to produce your delicious and perfectly wrapped egg roll.
RECIPE ON HOW TO FRY YOUR PERFECT HOMEMADE EGG ROLLS
INGREDIENTS
- 2 Cups flour (500g)
- 5 medium size boiled eggs
- 1/4 Cup Sugar
- 2 tablespoon Margarine/Butter (125g)
- 1/2 teaspoon Baking powder
- Pinch of salt
- 1/2 cup warm water
- Vegetable/Soya oil (for deep frying)
DIRECTION
1.In a medium sized pot, boil the eggs for about 10mins till hard boiled. Once cooked and while hot, place the hard boiled eggs in cold water. This is to ensure the shell comes off easily.
2. In a large bowl, sieve flour, sugar, baking powder, nutmeg (if you are using) and salt into an empty bowl mix thoroughly.
3. Add the margarine/butter. Work into it with the tip of your hand till it looks crumbly like breadcrumbs.
4. Add the beaten egg and mix together. The dough should look dry at this point.
5. Make a well in the center of the dough and gently add water little by little till the dough is soft, smooth a little sticky elastic dough.
6. Work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.
7. Divide the dough into 10 equal sizes. Take them one after the other, roll it on your floured working surface. Do not roll it too flat because the inside should be a bit thick. That’s when you’ll enjoy this the most.
8. Rub oil in your hands collect little of the dough and make a hole in the centre of your hand with the dough, put one egg inside and tightly wrap each of the dough around each Egg. (This is done to avoid being unwrapped when frying).
10. Repeat the process until you exhaust the remaining dough.
11. Preheat your vegetable oil in a deep fryer or pot. Oil should not be too hot or too cold. It should be on medium temperature so that it doesn’t get soaked in the oil or uncooked).
12. Fry the egg rolls on medium heat turning over and over till golden brown. To ensure it cooks well on the inside, reduce the temperature of the burner once you drop the egg rolls into the oil. Do not fry everything at once, maybe 2-3 times to give enough space for rising. We don’t want them to break in the process.
13. Remove from the oil and drain on a paper towel and serve your Egg Roll hot or warm.

THINGS TO NOTE WHEN MAKING A PERFECT NIGERIAN EGG ROLL
- Fry as soon as possible: in other words, fry as you wrap. Keeping the rolls for a longtime before frying will sometimes make the egg rolls to open up when frying. This is because the dough around the egg will continue to rise as the wait for frying time. The dough will however, lose it’s strength around the egg by the time you fry.
- Fry on medium heat: Frying the egg roll on a high heat will prevent the Egg roll from cooking on the inside. If you’re using stove top, set it to blue flame and if you’re using gas cooker, lower the flames.
- Generous oil: always use enough oil to deep fry the perfect Nigerian Egg in other to get the best result. Remember that, too small oil will make you egg roll not cook properly and could also result to a burnt outcome.
- Bake: You can also bake this if you choose to, but the Egg Roll will not be as soft on the inside as the deep fried one.

HOW TO MAKE BAKED PERFECT NIGERIAN EGG ROLL
Ingredients for Baked Egg Roll
- 250grams (2 cups) of flour
- ¼ teaspoon of salt
- 4 medium boiled eggs
- 70grams of sugar
- 50g of margarine, at room temperature.
- 1 teaspoon of nutmeg (optional)
- 1 teaspoon of baking powder
- 1 tablespoon of milk
- 1 raw egg, beaten (For Egg Wash)
- 125ml of water.
DIRECTION
1. With the aid of a sieve, measure and sift your flour into a large bowl. Add your baking powder, ground nutmeg, salt and sugar. Stir all to combine
2. Add your butter in little increments and mix thoroughly with either your hands or a whisker till your butter is exhausted. Add milk and any flavouring agent of choice, mix very well to combine.
3.Knead your dough, but don’t overwork the dough. The consistency should be a stretchy, non-sticky dough.
4. Cover with a plastic wrap and allow to rest for about 5 minutes. While your dough is resting, break egg into a bowl, add a little milk (optional) and whisk together. Set aside for later use as your egg wash.
5. Uncover your dough from the plastic wrap, place on your work surface and divide into four parts.
6. Set the rest aside: and then pick one of the divided parts and place on your work surface; roll out with a rolling pin and, using a circular object, make a round shape.
7. Place your egg into the already shaped dough and wrap around the egg. Repeat step 6 & 7 till all your eggs have been exhausted.
8. On a baking sheet, place parchment paper and place your wrapped eggs dough on it. Brush your egg rolls with the egg wash mixture using a pastry brush
