- To check that the oil is hot enough before frying, put a drop of batter into the oil. If the batter goes down to the bottom of the oil and remain there, then the oil is not ready but if it sizzles and comes up to the surface of the oil, then you can start frying.
- Test for the activeness of the yeast you’re using by putting the 2tablespoons of yeast into a small bowl, add 5 tablespoons of water to it, sprinkle with sugar & set aside.. If after some minutes your yeast turns frothy, it still very good, if not, don’t use it.
- 3 cups of Plain Flour (375g)
- 3 teaspoon yeast.
- 1/2 teaspoon ground nutmeg(Optional)
- 1 Cup of sugar
- 4 pinches of salt.
- 1-2 Cups Lukewarm water (for mixing)
- Vegetable Oil (for frying)
- 1 sachet of peak milk (Optional)
- Chili pepper to taste.
- In a big bowl, mix all the dry ingredients together, by this I mean, the flour, grounded nutmeg, powdered yeast, sugar and salt.
- Add lukewarm water in small quantity and turn it properly. This could be done using spatula or hand. Mix thoroughly till all the ingredients incorporates well.
- If you are not using the powdered yeast, then add the yeast you mixed with lukewarm water after mixing all the dry ingredients. Use warm water to mix the puff puff ingredients if you want it to rise faster.
- Keep mixing till the batter is smooth but not too watery to drop from the spoon.
- Tightly cover the bowl with a kitchen towel or aluminium foil.
- Cover in warm place and allow the batter to rest for about 40- 45 minutes. The batter should rise thrice it’s original size and also have some air bubbles.
- Heat the oil and apply the test to check when oil is hot enough for frying. scoop some batter into the oil with your hand or use Puff Puff making machine if you have it.
- scoop some batter with your hand and squeeze out from between your index finger and thumb into the oil. Try not to overcrowd the oil so there is enough space for the puffs to fry well.
- Stir constantly and fry till golden brown then remove and place on paper lined sieve. Repeat process till batter finishes.
- If you want to reduce the oil on your fluffy Puff Puff as much as possible, then line your sieve with paper towels. The paper towels help soak away the excess oil on the fluffy Puff Puff.
NOTE: Grease your hands with some oil it makes scooping and squeezing into the oil easier and less sticky.
