How to Prepare Egg Soup Using Okra or Melon Seed in 20mins
Egg Soup is a delicacy native to the People of Akwa Ibom state and also few other tribe like the Tiv tribe of Benue state in Nigeria. However, the method of cooking it differs from tribe to tribe!
It’s mostly prepared with raw eggs and Okra or with melon. You can choose to cook it with fluted pumpkin leaf and also with locust bean, green leaf and palm oil.
Egg soup can replace egusi soup if you are looking for healthier option. It’s very rich in protein and vitamins.
It has saved a lot of people from hunger because it’s very quick to prepare with the least amount, you can cook this food and you will enjoy it.
How to Prepare Egg Soup with Okra
RECIPE
- Chicken or meat of choice
- 3 to 4 eggs
- Okra (Chopped)
- Crayfish
- Dryfish
- Seasoning cube
- Palm oil
- Salt
- Fresh pepper
- Water
- Cameroon pepper (Optional )
- Prewinkle (Optional )
- Dry or fresh prawns (Optional )
Equipment Needed
– Medium-sized pot
– Whisk or fork
– Mixing bowl
– Measuring cups and spoons
– Ladle or serving spoon
Equipment Not Needed
– Oven
– Blender
– Food processor
– Knife (unless you choose to add vegetables)
PROCEDURE
1. Wash, season and steam your fresh protein and set aside.
2. In a mixing bowl, crack the eggs and beat them well with a whisk or fork until they are thoroughly mixed. Set it aside.
2. In a medium size dry pot, add oil and place it on the stove over a medium heat. when hot, whisk your egg into it and stir.
3. When the egg curdles, add your steamed protein with the stock/broth and allow it to come to a gentle simmer.
4. Add your washed dry fish, Crayfish, salt, pepper, seasoning cube and little water and palm oil.
5. Once the stock /broth is simmering, reduce the heat to low, then add Okra and stir. allow the soup to cook for an additional 1-2 minutes on low heat.
6. Taste the soup and adjust the seasoning if needed, adding more salt, pepper or seasoning cube to taste.
7. Turn off the heat and let the soup sit for a few minutes, allowing the flavors to meld together.
Note:- you can add pumpkin leaf or any leaf , it’s your choice. Okra is also known as vegetable.
8. Serve and enjoy with any choice of swallow.
I prefer using fufu to any other type of swallow.
How to Prepare Egg Soup with Melon Seed
In Nigeria, egg soup with melon is a popular dish known as “Egusi Soup with Eggs”.
INGREDIENTS
- 3-4 raw eggs
- 1-2 cups of melon seeds.
- Chicken, Meat or any protein of choice
- A handful of cow skin (Kpomo)
- Smoked fish
- Seasoning cube
- Grounded Crayfish (Optional)
- Salt
- 1 Onion Chopped
- Palm oil
- Water
- Grounded Garlic
- Black pepper
- Grated ginger
Optional Ingredients:
- Bell pepper (Optional)
- Garlic (Optional)
- Ginger( Optional)
Instructions:
1. Grind the melon seeds into a smooth paste using blender or commercial grinding machine.
2. Wash, season and simmer your protein and set aside.
3. Heat the oil in a pot over medium heat.
4. Add the chopped onion and cook until softened, about 2-3 minutes.
5. Add the minced garlic and cook for another minute, until fragrant.
6. Add the ground crayfish (if using) and stir well.
7. Pour in the stock/broth and bring to a boil.
8. Reduce the heat to low and add the ground egusi seeds. Simmer for 10-15 minutes, stirring occasionally, until the soup thickens.
9. Crack in the eggs and stir gently to distribute them evenly.
10. Cook for an additional 2-3 minutes, or until the eggs are cooked through and the soup has reached your desired consistency.
11. Season with salt, pepper, and ginger (if using).
12. Serve hot, garnished with chopped vegetables (if desired).
