Easy Way to Prepare Nigerian Okra Soup In 15 Minutes
Okra also known as ladies’ fingers is a green vegetable popular used to prepare okra soup dish in many West African countries, especially Nigeria and Ghana.
INGREDIENTS FOR OKRA SOUP
Okra – 1 big bowl of fresh Okra
Onion (Optional)
Red oil – 3 cooking soup (Ladle)
Fresh pepper (Yellow or red pepper)
Dried fish
Stockfish head – 200g
Meat – Beef or Chicken
Fish: Ice fish (Mackerel/Titus)
Crayfish – 1 handful
Seasoning cube – 2
Salt – 1/2 teaspoon
Cow tripe ( Shaki/Kpomo)
Vegetables – Nigerian pumpkin leaves or spinach
Note: This is frying method of cooking Okra soup, it makes the okra crunchy.
PROCEDURES
- Gather all your ingredients and get them ready.

In a pot, season and cook your protein (fish, meat or chicken) until tender.
- Remove the cooked fish and set aside.
- Add stockfish, dry fish and cow tripe (Shaki/Kpomo) to cook.
Note: Removing the cooked fish before adding stockfish and other proteins will make the fish not to over cook and scatter in the pot. You can also air fry.
- Once your proteins are done, set them aside.
- In a pot, add your red oil, allow to heat a little.
- Add onions, salt and seasoning cubes. Allow it to cook a little or until fragrant.
- Pour in grated Okra and stir
- Stir and simmer until the okra becomes tender and slimy.
- Add crayfish and adjust salt and pepper according to taste.
- Add stock including stockfish, cow tripe and dry fish. Stir and cover to cook a little.
- Add washed vegetable, stir and properly.
- Re-add the cooked fish so as not to scatter and simmer for Minutes.
- Turn off hear and voilà your delicious, crunchy Okra soup is ready.
- Serve hot with any swallow of your choice including fufu, pounded yam or Semovita. I actually prefer eating okra soup with Semovita.
